How It Started

From the Gulf to the Table


Salt & Tide opened in the fall of 2021, the vision of Chef Isabella Ruiz. A Miami native who spent a decade cooking in the kitchens of New Orleans and Charleston, Isabella moved to Naples with a clear purpose: to build a restaurant that celebrated Gulf Coast ingredients without pretension.

She found her partners in the day-boat fishermen of Everglades City and Goodland, the farms of Immokalee and Buckingham, and the small-batch producers who share her commitment to quality. Everything at Salt & Tide is made in-house — the pasta, the cocktail syrups, the bread. If it can be made from scratch, it is.

The space itself tells the story. A warm, candlelit dining room anchored by a lively bar. Brass fixtures and white linen. A back patio that catches the evening breeze off the Gulf. It’s fine dining without the stiffness — a place where you can dress up or come as you are, where the staff knows your name and the wine list doesn’t require a translator.

Four years in, the mission hasn’t changed. We’re still here to bring the best of this coast to your plate, one season at a time.

Chef Isabella Ruiz


Miami native with a decade in the kitchens of New Orleans and Charleston. Opened Salt & Tide in 2021 to celebrate Gulf Coast ingredients without pretension. Her cooking is rooted in tradition but always evolving with the seasons.

Bar Director

Daniel Torres


Ten years behind the bar in New York and Miami. Daniel builds the cocktail menu around Florida citrus and tropical fruit, with house-made syrups and bitters that give every drink a sense of place.

General Manager

Carmen Reyes


Fifteen years in Naples hospitality. Carmen runs Salt & Tide with warmth and precision — she’s the reason the dining room feels like home and every guest leaves feeling taken care of.
